2025 Release NV Sparkling Cabernet

2025 Cabernet Sauvignon

Coonawarra, South Australia

Equally suited to festive dinners or a celebratory breakfast.

$35 per bottle

    Description

Balnaves Sparkling Cabernet honours the proud tradition of Australian sparkling reds while showcasing the purity and structure of Coonawarra fruit. Crafted using the traditional method, the wine undergoes secondary fermentation in bottle and is later transferred to fresh bottles for final packaging. Built around a solera dating back to the 1990s, blended with select wines from recent vintages, and finished with a dosage of aged vintage port, this wine offers remarkable depth, vibrancy, and complexity.

The bouquet is rich and inviting, with lifted aromas of dark cherry, cassis, and dried fig, layered with hints of cocoa, clove, and Christmas cake. The palate is plush and expressive, driven by tart blackberry and blood plum fruit, underpinned by savoury, tarry notes and a flicker of dried herbs. A fine, persistent bead brings freshness and energy to the wine's generous texture.

Approachable on release thanks to pre-tirage maturation, it also rewards cellaring, gaining further nuance with time. Equally suited to festive dinners or a celebratory breakfast.
