Balnaves have selected Cabernet Sauvignon parcels showing more complex characters with elegant structure for our Sparkling Cabernet Sauvignon. Blended from eleven different vintages selected from 2014-1995, this wine has been matured in an old French oak solera prior to tirage in September 2014. The solera provides complexity and maturation with-out oaking the wine. Disgorged in December 2014, with a small dosage of vintage port to again add lift and complexity.
Rich and very complex with bright blackcurrant, blackberry and cranberry fruit, combined with mature Coonawarra Cabernet characters of leather, mushroom and earth. The palate is sweet and round but finishes balanced and dry. Ready to drink on release, this wine will improve and become more complex with careful cellaring.
